Watermelon Tomatillo Salsa

Ingredients
  • 2 cups quartered medium tomatillos (about a dozen)
  • 2 tbsp vegetable oil
  • 1 cup diced onion
  • 2 garlic cloves, minced
  • 2 tbsp minced jalapeno (about 1 large)
  • 2 tsp ground cumin
  • 2 tsp mild chili powder
  • 1½ cups tomato puree
  • 2 cups watermelon chunks
  • 1 tsp chicken bouillon
  • 1 cup fresh cilantro
  • salt and pepper to taste
Instructions
  1. Heat oil in a large skillet. Saute onion for a few minutes over medium high heat or until soft.
  2. Add tomatillos and jalapenos and saute another 5 minutes or so until soft and just starting to brown around the edges.
  3. Add the garlic and cook another minute or two.
  4. Turn heat down to low and stir in the cumin, chili powder, and tomato puree. Simmer for 5 minutes, then remove from heat and cool.
  5. Place the mixture in a blender, add remaining ingredients and blend.
  6. Adjust salt and pepper to taste, and serve.
  7. Enjoy!
