| Watermelon Tomatillo Salsa |

- 2 cups quartered medium tomatillos (about a dozen)
- 2 tbsp vegetable oil
- 1 cup diced onion
- 2 garlic cloves, minced
- 2 tbsp minced jalapeno (about 1 large)
- 2 tsp ground cumin
- 2 tsp mild chili powder
- 1½ cups tomato puree
- 2 cups watermelon chunks
- 1 tsp chicken bouillon
- 1 cup fresh cilantro
- salt and pepper to taste
- Heat oil in a large skillet. Saute onion for a few minutes over medium high heat or until soft.
- Add tomatillos and jalapenos and saute another 5 minutes or so until soft and just starting to brown around the edges.
- Add the garlic and cook another minute or two.
- Turn heat down to low and stir in the cumin, chili powder, and tomato puree. Simmer for 5 minutes, then remove from heat and cool.
- Place the mixture in a blender, add remaining ingredients and blend.
- Adjust salt and pepper to taste, and serve.
