Caramelized Peppers & Onions

Ingredients
  • 2 cups thin sliced onion
  • 2 strips bacon, diced
  • 1½ cup thin sliced red bell pepper (1½ - 2 peppers)
  • 4 garlic cloves, sliced thin
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp hot diced green chiles
  • optional: salt & pepper to taste
Instructions
  1. In a medium skillet, heat olive oil. Add the onions, cover, and cook until soft over medium heat, stirring occasionally.
  2. Add the bacon and peppers, cover, and cook another 5-10 minutes or until soft, then add the garlic, increase heat to medium-high, and saute until veggies start to brown on the edges.
  3. Add the balsamic vinegar and chiles and saute a few minutes till well blended.
  4. If desired, add salt & pepper to taste and serve on burgers or as a side
  5. Enjoy!
