Denver Green Chili Recipe of the Week - 12/30/07


Did you know that many supermarkets now carry frozen green chile?
Now even King Soopers and Wal-Mart carry both mild and hot. I have
bought some of the brand they carry and will write a review shortly.

Colorado Caviar

I invented this one loosely based on a dish I tried recently in a wonderful
restaurant in Portsmouth, Virginia. Theirs was good, but you couldn't
even taste the jalapeno they claimed was in it. This is a flavorful,
addictive dish that you serve with tortilla chips. It is supposed to
be an appetizer, but I couldn't stop so it turned into my entire meal.

If you are serving it at a party, you'd better double it.

INGREDIENTS:
1 15 oz can black beans, drained
1 cup kalamata olives, finely diced
1 cup frozen corn, thawed
½ cup diced red bell pepper
2-3 cloves garlic, minced
3 tbsp olive oil
2 tbsp balsamic vinegar
2 tbsp medium hot diced green chiles
(or add diced jalapeno to taste)
¼ cup cilantro, chopped
dash salt


PREPARATION:
1. Combine first 4 ingredients in a bowl and mix well.
2. Sautee garlic in oil over medium heat until lightly
browned, about 2 minutes.
3. Turn off heat and stir in green chiles and then balsamic
vinegar. (Vinegar will splatter if added directly to hot mixture).
Mix well and add salt.
4. Pour the garlic-green chile mixture over the beans, olives, and
corn in the bowl and mix thoroughly.
5. Add the cilantro and stir.
Serve with tortilla chips.

Note: You may want to add more cilantro, green chiles, or
jalapeno to taste.

Preparation Time: 15 minutes
Makes: about 3 1/2 cups
