Chopper’s Green Chile
Classic Green Chile Cream Corn

Chopper’s Green Chile2 pounds diced pork
1 teaspoon salt
5 1/2 cups water
1/4 pound margarine
1/2 large yellow onion, medium dice
1/2 teaspoon dried oregano
1/2 tablespoon granulated garlic
1 tablespoon chili powder
3/4 cup flour
2 1/2 cups chicken broth
1 7-ounce can Hatch hot chiles, chopped
2 7-ounce cans Hatch mild chiles, choppedIn a medium covered saucepot, simmer pork in salted water until tender, about 1 1/2 hours.

2 7-ounce cans Hatch mild chiles, choppedIn a medium covered saucepot, simmer pork in salted water until tender, about 1 1/2 hours.
In a large, heavy pot over medium heat, melt margarine. Add chopped onion, oregano and granulated garlic. Sweat the onion till softened.
Stir in the flour to make a roux, stirring constantly and adding a little more margarine if needed. Cook roux until lightly browned. Add chicken broth a little at a time, whisking until smooth. Add the chiles, chili powder and the pork – including all the liquid it was cooked in.
Gently simmer mixture, stirring occasionally, until thickened.

1/2 cup fresh diced jalapenos (optional)
1/2 cup fresh chives
1/2 cup red bell pepper (diced)
salt, pepper and fresh garlic to tasteMix all in sauce pan or crock pot and heat slowly until hot, stirring occasionally.

I am looking for a recipe that has green chili and zuchini/squash? Cabalacitas? Or something like that. A friend I worked with made it and I havent found a recipe for it.

THANK YOU for posting the Halloween Nachos recipe. If I had found this earlier in the week I would have used it yesterday for our Halloween party. LOL! Next year I will look for the black & orange chips early in October & plan for the nachos. They looked wonderful & so festive! It would be easy to work green into the recipe with guacamole & salsa verde. But I am stumped on adding something purple…..will have to think about that one!

No problem. Just keep in mind that the chile sauce will be a tad spicier.
Anyone have a recipe for chubbys chile on 38th?
I keep getting requests for this. The family guards its recipe very carefully. We’ll have to create a copycat recipe to satisfy the requests.
Anita I remember a long time ago you said you were working on a copycat recipe of chubby Chile and was wondering if you would share your recipe.

Yeah, what happened is someone emailed me their copycat recipe for Chubby’s and I was all set to try it out and tweak it if necessary. I bought a quart of Chubby’s chili, pulled up this recipe and there was no way it was even close. I’m considering taking another shot at it – but it will be creating a copycat recipe from scratch. This can be very time-consuming and I’ll have to wait till October when I have more time.
