Ever had the $2 breakfast burritos at Jack-n-Grill?
I often pick one up when I get the urge and find myself
near 25th & Federal. You can get them all day long
(but
you need to specifically ask for them). They have 4
varieties,
and the original and chicken are my favorites.
This recipe is my own version of their original, but with
sausage added. I used King Soopers Italian sausage
and mild Hatch chiles.
My 12-year-old son loved this.
Ingredients:
2 cups diced potato
1 cup water
1 cup chopped onion
1/2 lb sausage
1/2 cup diced green chiles
1/2 tsp salt
1/4 tsp oregano
4 eggs
1/4 cup milk
1 cup shredded cheese
4 large flour tortillas
shredded lettuce, diced tomatoes, avocado, pico de gallo, whatever
(optional garnish or additives)
Note: Want a vegetarian version? Use about 1/2 tablespoon oil
instead of the sausage. It's just as good!
Preparation:
1. Bring potatoes & water to a boil in a covered saucepan or
skillet,
then simmer over medium-low heat for 30 minutes.
(Note: Instead of boiling, you could microwave 3 medium potatoes
for 4-5 minutes, peel, then dice. You just want to be sure they
are thoroughly cooked.)
2. Sautee onion with the sausage in a skillet until the
sausage is thoroughly browned and onion is soft, about 5
minutes.
3. Add the diced green chiles, potatoes, oregano, and salt
and sautee for another minute. Turn down to low heat.
4. In a bowl, beat the eggs & milk. Add a dash of salt, if
desired.
5. Scramble eggs in a skillet. As they are approaching the
soft-set stage, sprinkle the cheese over and cook until firm.
6. Steam the tortillas. You can put them on a large plate and
microwave them for 1 minute; if you put a smaller plate underneath
containing a bit of water they come out nice and soft.
7. Assemble with a layer of potato mixture, a layer of the egg &
cheese mixture, and a layer of lettuce, tomato, etc. Fold as you
would any burrito.
Preparation Time: 45 minutes (20 minutes if you microwave the potatoes)
