These two recipes got a huge response - people raving
about how good they were and requests to send the
recipes again.
Bacon Chile Appetizers
Ingredients:
8 strips bacon
1 cup chopped onion
3 tbsp balsamic vinegar
1/4 tsp garlic powder
3 rounded tbsp dark brown sugar
1/2 cup diced green chiles, medium hot
2 cups shredded cheddar cheese
2 packages phyllo cups (15 cups each)
Preparation:
1. Preheat oven to 350 degrees. Fry bacon in a skillet until starting to crisp.
Remove bacon and set aside. Pour bacon fat into a container.
2. Return 3 tbsp of the bacon fat to the skillet. Sautee onions until soft,
then add garlic powder, vinegar, and green chiles. Add bacon and reduce to
a thick,
caramelized consistency.
3. Place phyllo cups in 13 x 9 baking dish.

Heap each cup with shredded cheese. Note: cheese will shrink down
quite a bit. Top each cup with about 1/2 tsp of the bacon mixture.
5. Heat in oven for 10 to 15 minutes or until cheese is melted. You can
also pop these in a microwave for 1 to 2 minutes.

Meaty Garlicy Spicy Nachos
Ingredients:
1 lb ground beef
4 large (or 6 medium) garlic cloves, minced
1/2 cup chopped onion
1/2 cup diced green chiles (hot)
1/4 to 1/2 tsp salt (to taste)
1/4 tsp pepper
1/4 tsp red chile flakes
1 lb pepper jack cheese, shredded (about 4 cups)
1 avocado, chopped
1 cup diced tomato
2 green onions, chopped
1 cup chopped cilantro
1 bag tortilla chips
Preparation:
1. Brown the meat with the garlic and onion. Drain.
2. Add the salt, pepper, red chile flakes, and diced green
chiles and cook another 2 minutes, mixing throroughly and
adjusting
seasoning to taste.
3. Cover a 9x13" baking dish with a couple layers of
tortilla chips. Spread half the cheese evenly over the
chips, then spread the meat and top with the
remaining cheese.
4. Bake in 350 degree oven for about 5 minutes or until
cheese melts.
5. Remove from oven and spread the tomatoes, avocado,
cilantro, and green onions on top and serve.
Alternative: Instead of the baking dish, use multiple
microwave-safe serving dishes. Instead of baking,
microwave for 1 to 2 minutes or until cheese melts.
