Stir-fried Bok Choy with Mushrooms and Chiles
This has an Oriental flair - serve as a side dish or
on top of rice. Or you can add chicken or beef and
make it a main dish.
I just served this as a side dish. It's flavorful and light.
With mild green chiles, you hardly notice the chiles. They
add another dimension, but people may not realize there
are chiles in the dish. This will also be good with medium
hot or hot chiles.
This is very easy to make, so I will serve variations of this
often.
Ingredients:
1 tbsp olive oil
2 cups chopped mushrooms
2 cloves garlic, minced
1 tbsp minced fresh ginger
8 cups chopped bok choy
1/2 cup diced mild green chiles
2 tbsp soy sauce
Preparation:
1. In a large skillet or wok (one with a lid), sautee the mushrooms
in the olive oil over medium heat until soft, about 10 minutes.
2. Add green chiles, garlic, and ginger and cook about another
2 minutes.
3. Add bok choy and soy sauce and cook another 5 minutes until
greens are wilted and stalks are crisp tender.
Cooking time: 20 minutes
Serves: 4
