Denver Green Chili

more hours of cutting the fat off of pork when making green chili. It's

Beef & Potato Burritos

I have my classics that I cook over and over again, and
my variations on my classics. Burritos are one of them.
One of my challenges is that my 13-year old son doesn't
go for spicy food. Yaah! But he loves my burritos. I just
have to put a lot more green chiles in mine than his.

The potato & ground beef version is every bit as good
as the bean & beef burrito. And it's so easy!

The challenge with a non-smothered burrito is not
overfilling it. If you buy standard size tortillas, it is hard
not to overfill them. You should use at least 12-inch tortillas.

Easy Beef & Potato Burritos

Ingredients:
note: amounts are approximate depending on how you
like your burritos!

4 to 6 large flour tortillas (depending on how fat you like them)
1 lb ground beef
2 medium to large baking potatoes
1 cup salsa
1 cup diced green chiles
1/2 tsp salt
1/2 tsp pepper
2 cups grated cheese
1/2 cup sour cream
2 cups shredded lettuce
optional: diced tomatoes, diced avocadoes,
sliced black olives, chopped fresh cilantro

Preparation:

1. Optional: Start steaming the tortillas.
I put them on an egg poaching rack in a large skillet with a cover
on low heat so they will be soft by the time the filling is done.
2. In a very large skillet (12+ inch), break up the ground beef and
mix the salsa in thoroughly. Brown over medium heat, draining
excess fat.
3. While the beef mixture cooks, wash the potatoes and microwave
on high for 6 minutes or until cooked throughout.
4. When potatoes are cooked, rinse under cool water (just to cool
down so you can handle) and peel. Chop into small cubes and mix with
the beef mixture in the skillet,
5. Add green chiles and mix thoroughly, seasoning with more salt,
salsa, and green chiles to taste.
7. To assemble each burrito, place a tortilla on a large plate and layer
with about 1/4 cup cheese and 1/2 to 3/4 cup beef/potato mixture.,
then a bit more cheese. Microwave for 1 to 1:30 minutes to melt cheese.
4. Top each one with 2 tbsp sour cream, about 1/2 cup shredded lettuce,
and any optional ingredients (tomato, avocado, olives, etc.).

. Fold and serve.


Preparation time: about 30 minutes
Serves: 4 to 6
