Sausage Chile Chowder

 

This is a hearty, flavorful soup that’s also easy to make. I served this at the Nick’s Garden Center Chili Fest on September 7, 2013, and got more requests for the recipe than I’ve ever had for a recipe.

Easy, crowd-pleasing soup. Chiles add a nice heat and flavor to an otherwise classic chowder.

Ingredients
  • 1 lb hot Italian sausage (I used King Soopers)
  • 3 large Yukon Gold potatoes
  • 1½ cup chopped onion (1 large)
  • ¼ cup bacon bits
  • 3 garlic cloves, minced
  • 2 cups Swiss chard, chopped
  • 2 15-oz cans chicken broth
  • 2 cups water
  • 1 cup half-and-half
  • ½ cup diced green chiles (hot or medium hot)
Instructions
  1. Brown sausage in a skillet while breaking it up into small pieces with a wooden spoon.
  2. Place in a crockpot and add chicken broth and water and stir.
  3. Add onions, potatoes, and garlic, and cook on low for 2½ to 3 hours, or until potatoes are done.
  4. Add salt and pepper to taste, then add Swiss chard and half-and-half. Cook on low for a half hour or until chard is tender.
  5. Add green chiles to taste, simmer for 10 minutes, and serve.
