Chile Cheese Wontons

Ingredients
- 1 8 oz package cream cheese (room temperature)
- 3 tablespoons sugar
- 1 stick imitation crabmeat (or ¼ cup crab meat)
- 1 green onion
- ¼ cup diced green chiles
- wonton wrappers (should be available at any grocery store - you may have to ask to find them)
Instructions
- Pour 2 to 3 inches of oil in a deep fryer or pot with a candy thermometer. Set to 375 degrees or medium high heat.
- Mince the crab and the onion.
- Mix the cream cheese, crab, onion, and green chiles and blend thoroughly.
- For each wonton, take a wonton wrapper, dip it in water, then scoop about a rounded teaspoon of the cheese mixture onto the center of the wrapper. Pinch the corners of the wrapper together in the center so it holds an x shape. Do not seal - you want to see the cheese in each of the 4 corners. (The oil getting in there gives it the texture.)
- Assemble about 6 wontons at a time and fry them while you assemble the next 6.
- Make sure oil is at 375 degrees and fry each batch for 1 to 2 minutes, till they are a nice golden brown. Remove with slotted spoon and place on paper towels to drain.
- Serve with sweet and sour sauce.
