Diana's Salsa - 1st place winner Denver Chili Fest 2014

 

This spicy and unique recipe by Diana Hardcastle was 1st place winner at the 2014 Denver Chili Fest. It is unusual in that it includes pickles – I’ve never seen that before. When I tasted this at the Chili Fest, I noticed something different about it, but did not pinpoint exactly what.

Note the amounts of the ingredients are not specific. So… I’d start with the basics (tomatoes, cilantro, avocado, lime juice) and gradually add pickles and jalapenos to taste, then adjust the seasoning salt and garlic salt.

Ingredients
  • 2-3 pickles
  • 2-3 large tomatoes
  • 2-3 jalapenos
  • handful of cilantro
  • ½ - 1 avocado
  • 1-2 limes
  • seasoning salt
  • garlic salt
Instructions
  1. Finely dice the pickles, jalapenos, and cilantro and set aside.
  2. Juice 1 or 2 limes and set aside.
  3. Coarsely chop avocado and tomatoes,.
  4. Combine the tomatoes, avocado, cilantro and juice of one lime in a large bowl.
  5. Add about ¼ tsp garlic salt and ¼ tsp seasoning salt.
  6. Gradually add pickles (about 1 tbsp at a time) and jalapeno (about 1 tsp at a time) to taste. Be aware that flavors will blend as the salsa sits.
  7. Add more lime juice, seasoning salt, and garlic salt to taste until you get the desired flavor combination.
