[Update: I’ve already been corrected – the accepted spelling is “migas.”] I’m here in San Antonio, where I’ve just discovered megas (pronounced “MEE gahs”), a breakfast dish served by all the Mexican diners and dives. Each restaurant has its own version. Basically it is made with eggs, corn tortillas, onions, green chiles, and just about anything else you want to throw in. This is a common way to use stale tortillas and leftovers.
The version I had (shown in the photo) had leftover broccoli and potatoes in it.
Megas - a Tex-Mex egg dish

Ingredients
- 1 tbsp olive oil
- ½ cup diced onion
- ¼ cup mild diced green chiles from Select New Mexico
- 3 corn tortillas, cut into 1-inch pieces
- 6 eggs
- 2 tablespoons chunky salsa
- 1 cup (4 ounces) shredded Monterey Jack cheese
- 1 small ripe avocado, peeled and diced
- 1 tablespoon lime juice
- Sour cream
- Chopped fresh cilantro
- optional: cooked, chopped bacon, vegetables of your choice, tomatoes, garlic, green onions, etc.
Instructions
- Heat olive oil in 12-inch nonstick skillet over medium heat. Add onion and green chiles; cook and stir 1 minute or until soft.
- Add tortillas and cook about 2 minutes or until soft and heated through.
- Slightly beat eggs and salsa in small bowl. Pour mixture into skillet. Cook, stirring occasionally, until eggs are firmly scrambled.
- Remove skillet from heat; stir in cheese. Garnish each serving with avocado tossed in lime juice, sour cream and cilantro.
Migas have around for a long time. Your pronunciation is correct but the spelling is not. Again, it is MIGAS.

I’ve been waiting for your comment! I had the feeling someone would nail me for that. I posted this while I was still in San Antonio staying with friends. They cooked the migas for me and they spelled it megas; I had never heard of this dish before. It is definitely Tex-Mex and not Den-Mex. I did do some web research and found some that spell it “megas”, but the vast majority spell it “migas.” I’ve added to the post to correct it … sort of.
Got any recipes you want to share? Any other Tex-Mex? Anything else I haven’t heard of so you can get me the right spelling before I publish?
