David's Green Chili - 1st place

This recipe won 1st place at the 2014 Denver Chili Fest. This was also by far the simplest recipe. While spices can add to the depth and flavor of green chili, they also tend to mask the roasted green chile flavor. In a simple recipe like this, that green chile flavor tends to stand out. Classic New Mexico green chile recipes often are simple and rely on the flavor of green chiles for their character.

Be careful to add only half the garlic salt and then add more to taste. Spices and salt can’t be removed, so you want to make sure you don’t overdo it.

A classic, simple New Mexico green chili that highlights that roasted green chile flavor. This won 1st place at the 2014 Denver Chili Fest.

Ingredients
  • 1 lb diced pork
  • 1 15 oz can diced tomatoes
  • 1½ cups diced green chiles (about 10-14)
  • ¾ cup diced onion (about ½ medium onion)
  • 4 tbsp garlic salt (a bit at a time, to taste)
  • 1 tbsp chopped cilantro
  • 4 cups water
Instructions
  1. Brown pork in a large skillet.
  2. Add remaining ingredients, setting half the garlic salt aside, and simmer, covered, for 2 hours.
  3. Slowly add remaining garlic salt, adjusting to taste until you reach optimal level.
  4. Enjoy!
