True Green Chile lovers know that freezing fresh roasted chiles within hours after roasting is the best way to enjoy that unique roasted chile flavor all year round.
But there is more to it!
Requirements for maximizing quality of frozen green chiles:
- Freeze same day the chiles were roasted
- Use heavy-duty freezer bags (see our freezer bag tutorial)
- Vacuum seal the bags; if no vacuum sealer, squeeze all possible air out before closing
- Freeze in a deep freeze at sub-zero temperatures, not refrigerator freezer
- Freeze with skins on, unless it makes a big difference to you*
* Ok, I confess. I peel and seed my chiles before freezing. Why? If I had to peel and seed every time, I would very rarely cook with chiles. Plus, any loss of flavor from peeling before freezing is minimal, perhaps even undetectable.
