Hot Chile Queso Dip

Hot Chile Queso Dip is about as simple as it gets with only 6 ingredients – heat it up in 5 minutes, serve with tortilla chips, and watch people snarf it down. Double or quadruple batch is suggested for parties.

Hot Chile Queso Dip has only 6 ingredients, takes about 5 minutes to make, and makes a great party dip that’s hard to resist! It’s served hot, and though it gets more solid as it cools, it’s still tasty and scoopable onto chips at room temperature.

I used a Mexican cheese blend for this – specifically the Kroger brand that has Monterey Jack, Cheddar, Queso Quesadilla, and Asadero Cheese. This would work very well with Velveeta and would tend to stay melted even at lower temperatures than with this cheese blend. Be aware that sharper cheeses tend to need higher temperatures to melt. You can use them in this recipe, but be aware that as the dip cools, it become more solid more quickly. You can also use any mild salsa or even taco sauce. It’s a very forgiving recipe. If you’re taking it to a pot luck, nuke it in the microwave right before putting it on the table. A slow cooker is also good for keeping it warm.

This is definitely a comfort food. I’ve already eaten way too much of it, and I even stopped bothering to scoop it up with a tortilla chip – just ate some of it straight from the serving bowl with a spoon. I’ll have to avoid stepping on the scale for the next week or so.

This is one to keep in your recipe file – great to take to parties and an easy choice when you have little time to make it. Hope you like it!

Serves: 2¾ cups
Ingredients
  • 4 cups (1 lb) shredded Mexican Blend cheeses, cheddar or Velveeta
  • 2 tbsp flour
  • ¾ cup mild salsa or taco sauce
  • 2 tbsp chopped sun dried tomatoes in oil
  • ½ cup diced mild or medium green chiles (no need to drain canned)
  • ½ cup dairy sour cream
Instructions
  1. Toss together cheese and flour and set aside.
  2. Combine salsa, green chiles, and dried tomatoes and heat in medium saucepan until boiling. Turn heat down to medium-low and gradually add cheese while stirring to melt.
  3. When all cheese is melted, stir in sour cream.
  4. Serve warm with chips.
  5. Enjoy!
