Chile Bacon Knots

Can't go wrong with this - chiles, bacon, and maple syrup are a guaranteed hit no matter what.

Ingredients
- 1 lb bacon, regular or thick sliced
- ½ cup maple syrup
- ½ cup medium or hot green chiles (either diced or whole)
Instructions
- Preheat oven to 400 degrees. Line a cookie sheet with aluminum foil. Place metal racks on top (cooling racks or baking racks).
- Pour maple syrup into a small bowl.
- If using whole chiles, lay them out on a cutting board and slice into ¼ inch strips.
- For each bacon strip, dip it in the maple syrup to coat completely, then place on a plate or cutting board. Place one or two strips of chile down the middle of the bacon strip. If using diced chiles, make a line of diced chiles right down the middle of the bacon strip.
- Fold the bacon strip over lengthwise to cover the chiles. Then shape the bacon like you would a pretzel. Place on the rack on the cookie sheet.
- Repeat with each bacon strip. Then drizzle a little of the maple syrup on the top of each chile bacon knot.
- Bake for 20 to 25 minutes or until browned the way you like it.
Notes
Regular bacon will make 18 to 20. Thick sliced bacon should make about 15 and will take about 5 minutes longer to cook.
