My absolute favorite dip recipe! It's just full of fabulous flavor ... plus quick & easy to make. Perfect for those New Years Eve parties, or for game day parties. This can be made with mild chiles, but I prefer hot. The Select New Mexico chiles add a nice chunky texture.

Ingredients
- 1 cup mayonnaise
- 1 8-oz package cream cheese
- 1½ cups shredded cheddar/jack mix cheese
- (or use half sharp cheddar and half Monterey Jack)
- 2 green onions, finely chopped (or ⅓ cup chopped onion)
- ½ cup diced green chiles (ideally Hot Select New Mexico)
- ⅛ tsp smoked paprika
- 8 slices bacon, cooked & crumbled
- 8 Ritz crackers, crushed
Instructions
- Blend mayonnaise, cream cheese, shredded cheese, green chiles, onions, and smoked paprika in a microwave safe bowl. Microwave for 1½ minutes.
- Remove, stir in half the bacon, and microwave for another minute or until hot and melted throughout.
- Top with crushed Ritz crackers and the remaining bacon. Serve with Ritz crackers or tortilla chips.
