Apricot Cream Cheese Tres Leches Bread Pudding

A totally decadent, lucious and easy to make version of bread pudding, made with Kings Hawaiian bread

Ingredients
  • 6 cups of King's Hawaiian bread or rolls torn into bite-sized pieces
  • 5 eggs, separated
  • 2 cups whole milk
  • 1 14 oz can sweetened condensed milk
  • 1 12 oz can evaporated milk
  • 1 tbsp vanilla extract
  • 4 oz cream cheese
  • 1½ cups sugar
  • 1 cup apricot preserves
Instructions
  1. Blend egg yolks, milks, sugar, and vanilla
  2. Beat cream cheese with ½ cup of above mixture and ¼ cup sugar in a separate bowl.
  3. In a third bowl, with a mixer and clean beaters, beat egg whites to a soft peak, gradually adding ¼ cup sugar.
  4. Add the bread into the milk mixture and let sit for 5 minutes.
  5. Blend whipped egg whites into the milk / bread mixture and pour into greased crockpot.
  6. Dot with cream cheese and apricot preserves and gently swirl with a knife.
  7. Cook on low for 3½ hours.
