Southwestern Ramen noodlesI tell people about this and they think it sounds awful.  Actually this is really wonderful. The end result is incredibly flavorful, and you can’t tell that there is sauerkraut in it; plus most people won’t realize it’s ramen they are eating.

Very important! You need to start with a really good salsa and balance it with the chiles you use. I used a wonderful medium red salsa from 505 Southwestern, so I added Hot Select New Mexico Green Chile. If I had been using hot salsa I would have used the mild green chiles. Adjust this to your taste! The measurements are basically a guideline. I also tried it with a tablespoon of sour cream stirred in and shredded sharp cheddar cheese on top – yummy.

This is also fabulous with chipotle salsa. I have made this with 505 Southwestern Chipotle Honey Roasted Green Chile paired with the medium 505 salsa – a match made in heaven!

Easy and very flavorful, this is a fancy, popular way to serve ramen noodles!

Ingredients
  • 2 packages beef ramen
  • 2 cups water
  • ¼ cup salsa
  • ¼ cup diced green chiles
  • ¼ cup sauerkraut
  • optional: diced or shredded cooked beef
  • 1 cup cooked vegetables such as onions, carrots, cabbage,
  • spinach, etc. sour cream, shredded cheese.
Instructions
  1. Prepare the ramen per package directions, except that you are using only half the water called for. Be sure to blend in the seasoning packet.
  2. Mix in the salsa, green chiles, and sauerkraut. Add more of any of these to adjust to your taste.
  3. If desired, add in any of the optional ingredients (beef or vegetables), mix well and serve.
