Avocados were on sale at Sprouts! 49 cents apiece. So I came up with this easy, flavorful, satisfying appetizer. All different colors of bell pepper were also on sale, so I almost turned this into a rainbow splash of every possible color. Then I decided red and green is colorful enough.
This appetizer is quick to prepare and just has a few ingredients that complement each other perfectly. If you are making this for a party, assemble them a few hours in advance, then bake right before serving.
You might consider creating your own variation, adding mushrooms, garlic, salsa, whatever.

Ingredients
- 1 avocado
- 1 tbsp diced onion
- 2 tbsp diced red bell pepper
- 1 tbsp diced green chiles
- 1 tsp olive oil
- 1 tsp balsamic vinegar
- ¼ cup shredded Monterey Jack or Pepper Jack cheese
- salt & pepper
Instructions
- Preheat oven to 450 degrees.
- Cut avocado in half lengthwise and remove the pit.
- Sauté onion, bell pepper, and green chiles in olive oil over medium high heat 3 to 4 minutes or until starting to soften, then stir in the balsamic vinegar.
- Spoon the vegetable mixture onto each avocado half, filling the pit indentation and covering the cut surface. Cover with the shredded cheese.
- Place the avocado halves in a baking dish and bake for 10 minutes or until cheese is fully melted and just starting to bubble.
- Serve with spoons.
Notes
Just multiply the recipe for as many avocados or people you want to serve. Very easy!
