Easy Bacon Chile Appetizers

 

I took these to a Christmas party last night, and everyone raved about them, calling them “awesome!” They are extremely easy and good with either mild green chiles or hot. I made half the batch with Select New Mexico mild green chiles and half with Select New Mexico hot green chiles. Every version was a hit.

I also made both a sweet and a savory version (brown sugar vs parmesan cheese). Again, they were all a hit.

Guaranteed crowd pleaser, and easy to make. This is also a great recipe to make with the kids - only 4 ingredients and easy to assemble! This is adapted from a recipe by Ree Drummond.

Ingredients
  • ⅓ box Keebler Club crackers (1 cellophane package)
  • 1 lb thin sliced bacon
  • ½ cup parmesan cheese (or ½ cup dark brown sugar)
  • ½ cup diced green chiles
Instructions
  1. Place a rack on a cookie sheet - these appetizers will be baked on the rack to let the fat drain.
  2. Cut the pound of bacon in half so that each strip is 4.5 to 5 inches long.
  3. One at a time, take a cracker, sprinkle about 1 teaspoon of parmesan cheese on, then about ½ tsp diced green chiles.
  4. Take a strip of bacon, stretch it slightly, and wrap it around the cracker so it covers the cracker completely. Then place it on the rack.
  5. Repeat with each cracker until all bacon is used up.
  6. Place in the oven, set to 250 degrees, and bake for 2 hours.
Notes
You can create a sweet version by substituting dark brown sugar for the parmesan cheese.
